Cuvée Olivier in Red 2015

Grape varieties :

  • 35 % Syrah
  • 30 % Cabernet

  • 30 % Mourvèdre
  • 5 % Grenache

Wine pairing :

“You can drink this wine decanted, on wild meat or red meat.”

    Vinification

    The stalks of cabernet and mourvèdre are taken off whereas the Grenache and syrah stalks are not.

    The grapes are picked up with a good maturity.

    Long fermentation in tanks for 1 month and aged in 600 liters’ barrels.

    Tasting commentaries

    Intense bouquet of black olive, going on black berry with a pepper note. The palate is hot, ample, and generous, you feel more the aging in mouth than you can smell it.

    This wine is powerful with tight tannins but the end is balanced.

    It depends of the period but you can decant this wine for 1 or 2 hours.
